Peridot unveiled at Hong Kong's The Henderson - the plant-based restaurant sports lime green interiors
Hong Kong’s The Henderson building has unveiled Peridot, its latest dining spot.
The restaurant is located as part of Summit 38 on level 38 of the brand new Zaha Hadid-designed office tower in the city’s Central district. It promises a "groundbreaking" cocktail programme with a plant-based, haute cuisine menu.
The restaurant’s ambitious plant-based culinary programme is crafted by culinary artist and Argentinian chef, Lisandro Illa. His dishes involve complex fermentation techniques with some taking more than 48 hours to prepare.
Peridot offers curated three or four-course lunch tasting menus alongside unusual, vegetarian bar snacks and evening dining. Illa’s forte is transforming familiar ingredients into imaginative new creations. His signature dish, Fleshy Fruits Cold Cuts, for example, uses nut-based cheeses and fruit-derived charcuterie. Each dish represents weeks and months, sometimes even years, of experimentation.
Complementing the food is a terroir-based cocktail menu curated by François Cavelier, Peridot’s director of beverage. Cocktail mixes celebrate the ‘terroir’ or unique environmental factors like geography, climate and soil that influence the characteristics of each spirit. Each quarterly cocktail programme explores the landscapes where the spirits are crafted and the stories of their producers. Cavalier will also be offering a collection of rare spirits with limited-edition and small-batch bottles sourced from around the world.
At the heart of the dining room is a grand piano; guests can enjoy sweeping views of Hong Kong to the accompaniment of a live pianist and musicians from Thursday to Saturday, with internationally acclaimed saxophonist Veronika Semylit and a line up of DJs taking to the floor for late nights until 2am.
