Epicurean Group's latest dining spot aims to breathe new life into Cantonese culinary heritage in Hong Kong. Executive chef Eric Chan melds tradition with innovation to create a premium menu that “honours tradition, but is never bound by it”. Dishes at Pedder Chinese include claypot specialties, stir-fry options and premium offerings. Pedder signatures include stir-fried crab with chilli peppers in claypot, stir-fried sole with leek (in spicy and non-spicy iterations), drunken mantis prawn featuring fresh mantis prawns bathed in aged Huadiao wine and osmanthus liquor, stir-fried wagyu beef, crispy pork ribs with honey and black olive, braised oxtail in red wine claypot and much more.

One Duck Lane is named in part after North Lane on which it is perched and partly after its signature roasted Peking Duck. The smart eatery is located on the second floor of Hyatt Centric Victoria Harbour in North Point and is a revamp of the hotel’s original Farmhouse buffet restaurant. As the restaurant’s moniker would suggest, One Duck Lane is all about the roasted Peking duck; as well, expect Chinese culinary classics, premium seasonal seafood dishes and dim sum as its key culinary signatures. The relaxed yet elegant harbourside setting makes it an ideal destination for casual meals, family gatherings, and special occasions. The culinary team is in the competent hands of Hong Kong chef Jack Chan, previously Chinese executive chef at Sheraton Hong Kong’s Celestial Court restaurant.

An oden izakaya has opened in Soho, bringing Kansai-style oden culture to Hong Kong. The restaurant is helmed by Japanese chef Eto San who uses a ‘perpetual broth’ to create the oden (Japanese hot pot). Shokudo specialices in Kansai-style oden, which is characterised by a clear, less soy-heavy ‘dashi’, or soup stock. San maintains a ‘master broth’ that has been continuously replenished since the day it was made, allowing it to absorb the essence of the various ingredients used over time. The menu features more than 20 varieties of oden; highlight ingredients include Awaji onion, using onions from Awaji Island which are renowned for their sweetness, beef tendon, abalone, tiger prawn and Japanese radish. A selection of appetisers are also available, along with a wide-ranging drinks menu including the trending ‘Oden Cocktail’.

There’s a brand new restaurant coming to Hong Kong in February. Spanish chef Edgard Sanuy Barahona is launching Lola Maria, a ‘platillos’ dining experience on Hollywood Road. Barahona has opened a string of successful Spanish eateries for Epicurean Group, including Aire in Causeway Bay, Pica Pica in Sheung Wan and Barbar in Wan Chai, but this latest project is personal. “After many years in kitchens, I wanted to create a space that reflects my own journey, a balance between the authentic flavours I grew up with and the modern techniques I have developed throughout my career,” he said. “It is about warmth, generosity, and sharing food in the way it is meant to be enjoyed.” Menu highlights include platillos - small and big plates made for the table - such as traditional garlic shrimps, padrón peppers, Spanish omelette with chistorra (cured sausage) and leeks, Madrid ‘sando’ with fried baby squid and foie gras ‘collverd’ & negroni lollipops.

Hora Hospitality Group, the team behind popular French restaurant Babette Social Eatery in Shueng Wan, has opened a classic French brasserie in Wan Chai. Bringing a “laid-back twist to classic French dining”, Chouchou’s kitchen is led by executive chef Cédric Tsia whose Hong Kong career credits include Mandarin Oriental’s Amber and Louise by Julien Royer. The restaurant celebrates authentic Gallic flavours in what it hopes is a warm and unpretentious setting. The 70-seat venue offers a cocktail bar, dining area with open kitchen and an outdoor terrace. Menu highlights include tartare de boeuf, raviole de crabe, tournedos Rossini (beef tenderloin topped with seared foie gras) and sharing plates like canard à l’orange and traditional tourte française with black truffle, Comté cheese, Parisian ham and potatoes encased in puff pastry.

Casual fine-dining restaurant Ebauche has opened in Causeway Bay. The name, ébauche, means ‘sketch’ and reflects Hong Kong-born chef Antonio Au’s aim to create a ‘personal sketch’ of French cuisine rather than a reinvention of Gallic dishes; a French 'core' but with an Asian flavour memory. The eight-course tasting menu is served with an optional six-glass wine pairing; the tasting begins with canapés, followed by a seafood course featuring items such as snow crab and scallops. Main courses highlight dry-ageing and charcoal grilling, such as dry-aged duck breast, poached and charcoal grilled threadfin and charcoal-grilled wagyu. Then there's pud and the menu concludes with a pear dessert perfumed with osmanthus oolong and vanilla and petits fours. Au’s Hong Kong credits include two-Michelin star Ecriture. He is joined in the kitchen by award-winning pastry chef Cyrus Yan.

The Italian trattoria has opened its sixth venue in Hong Kong, this time in Sha Tin at New Town Plaza. The new pet and family-welcoming restaurant seats 70 diners inside and 30 more on an outdoor terrace just steps from a local dog park. Authenticity and simplicity are the restaurant’s watch words, with a cosy menu emphasising fresh ingredients and comforting dishes. Signature favourites that are included on the Sha Tin menu run from Alonzo’s carbonara with Italian eggs, prawn and asparagus risotto and chicken parmigiana topped with melted mozzarella cheese and tomato sauce. A children’s menu offers smaller portions with pasta options like bambini lasagne, penne bolognese, penne formaggio and more.

This popular Beijing dining spot has opened its first international outpost and Hong Kong is the lucky beneficiary. The venue has launched in partnership with Hong Kong hospitality group Elite Concepts. Spanish-influenced Migas is located in H Queen’s in Central and combines a restaurant, bar and music lounge. The space features an airy dining room, vermouth bar (or ‘vermuteria’), outdoor terrace and a ‘lab kitchen’ for live culinary sessions. The kitchen is helmed by Chef Jarrod Verbiak, culinary director at Migas Group, who is joined by Chef Li Siu Fung of L’Atelier de Joël Robuchon, 81/2 Otto e Mezzo Bombana and Estro. A highlight of the menu is the Josper-grilled meats, prime cuts that are slow-roasted and chargrilled. Come for the three-course lunch set, stay for late-night cocktails and music.

The popular steak restaurant has now opened a branch at Lee Garden Three in Causeway Bay. This new flagship venue is Flat Iron Steak’s largest location in Hong Kong and features an exclusive ‘secret menu’ curated by chef Timothy Rattray, previously of Carbone. Highlights include M9 wagyu beef cheeks in red wine sauce, Iberico ham baked macaroni and cheese, grilled lamb shank and a lunch-exclusive Wagyu short rib pineapple bun. Bar bites and snacks such as sliders and pork buns are available on the terrace.
