A new restaurant will be ‘popping up’ in Hong Kong over the summer. Marrow, which refers to bone tissue rather than the vegetable, is a meat-led dining space in Wan Chai that will be serving until the end of September. 


The time-limited space opened on July 1 on Lee Tung Avenue and will run until September 30. Conceived as a contemporary take on the classic grill restaurant, Marrow will be showcasing “exceptional” produce, lesser-known cuts and open-fire cooking. The dining space explores unexpected ingredient pairings and local flavours, rather than focusing solely on premium steaks and steakhouse rituals. 


The menu is curated by chef Chris Ma, formerly of popular Hong Kong fine dining destinations, Tate Dining Room and Amber. At Marrow, Ma will be channelling his fine dining experience into a more relaxed setting. 


Highlights on the à la carte starters menu include dishes like crispy barramundi croquettes, king fish crudo, Sichuan beef tartare, and Typhoon Shelter roasted bone marrow. The grill section features six dishes highlighting lesser known cuts and seafood, like Australian M4+ rump cap, Australian wagyu bavette, New Zealand Lumina lamb loin, tomahawk pork chop and Australian wagyu chuck eye steak. 


Moreish puds include chocolate chip cookie tiramisu, Paris-Brest with peanut praline and salted caramel and croissant ‘pain perdu’.


This is a delicious, albeit time-limited, opportunity to experience a fresh interpretation of meat-focused dining. Equal parts grill restaurant, neighbourhood dining room and fire-led cooking culinary playground, Marrow at heart celebrates the joy of gathering around great food.
