Sushiyoshi opens at MGM COTAI Macau - Chef Hiroki hopes to impress with his sushi know-how



Another delicious reason to spend an evening in Macau comes with the opening of a Japanese omakase at MGM COTAI in Macau. 


Sushiyoshi is helmed by chef-owner Hiroki Nakanoue, known for his ‘creative sushi’ philosophy. Nakanoue blends Edomae-style sushi, a traditional type of sushi using ingredients from the Tokyo Bay area (‘Edo’ is the old name for Tokyo) with an omakase (chef’s choice) experience.  


According to Nakanoue, the menu will evolve with the seasons, featuring fresh seafood and seasonal produce flown in from Japan and paired with premium European ingredients. The debut, winter menu features highlights like Fukuoka mackerel with tofu toast, where rich mackerel is balanced with Kyoto cotton tofu marinated in white miso. Nakanoue’s signature creation, foie gras ice-cream caviar, includes seasonal nigiri (small balls of sushi rice topped with seafood), featuring Okayama oyster and the rich, deep-sea fish ‘chiba alfonsino’, or golden snapper.



The restaurant design is a blend of traditional ‘Sukiya-zukuri’ Japanese teahouse-inspired architecture and Kare-sansui (a dry, or rock garden, landscape) aesthetic. The centrepiece of the space is an open sushi bar created from a single piece of Hinoki wood. Contemporary artworks by Chinese abstract artist Hsiao Chin and pen drawings by Macau artist Eric Fok decorate the walls. 


“Through this collaboration, I look forward to merging traditional Japanese craft with modern creative aesthetics, offering a bespoke Omakase experience that incorporates local elements and showcases the infinite possibilities of sushi,” said Nakanoue.
