The restaurant takes its ingredients incredibly seriously, sourcing its beef from the exact same prestigious farms as the legendary Parrilla Don Julio in Argentina. Master butcher Seth McKenzie oversees the in-house dry-aging fridge, where the 12oz Ribeye is aged for 75 days and the 8oz Tenderloin for 40 days before being seared to perfection on a traditional ‘plancha’ griddle.
