As Hong Kong's Indian residents gear-up to celebrate Indian Independence Day on August 15, Mandarin Oriental, Hong Kong, will host renowned executive chef Gurmeet Singh Bhamra of The Oberoi, Mumbai, for an exclusive weekend-long culinary collaboration. Between August 15 and 17, Hong Kong’s gourmands will be able to sample Bhamra’s innovative cuisine, forged over 15 years across several Oberoi properties in India, at Clipper Lounge and Café Causette.
Across the weekend, Bhamra will whip up an array of traditional and modern Indian dishes that can be enjoyed during Clipper Lounge’s weekend brunch buffet (midday to 3pm, HK$888 per person) and dinner buffet (6 to 10.30pm, $988 per person) alongside the restaurant’s famous international offerings and Carvery. Expect highlights like Techa Tandoori Jhinga (tiger prawns marinated in peanut, green chilli, and coriander), Amritsari Chilean Seabass, White Truffle Murgh Malai Kebah (chicken marinated in cardamom and cream), Boan Pork Vindaloo, and Raan E Sikandar (double-cooked leg of lamb braised in a spice stock and finished in a tandoor).
Over all three days, Bhamra will also offer selected dishes as part of Café Causette’s set lunch and dinner options (two courses for $488 or three courses for $588, with tea, coffee, or soft drinks). Diners at the popular eatery will be able to enjoy appetisers like Paan Patte Ki Chaat (fried betel leaves topped with sweet yoghurt, date chutney, and mint chutney) and Dahi Ke Kebah (fried yoghurt and cottage cheese dumplings served in a tomato reduction), alongside mains such as Bater Khas Makhani (Amritsari-style quail cooked in smoked cashew gravy) and Kadhi Lobster.
