Enjoy Michelin-quality sushi at Sushi Kissho by Miyakawa


The hotly anticipated dining space at the recently launched Raffles at Galaxy Macau, part of the Galaxy Macau mega-development, has finally opened its doors.


Tantalisingly billed since Raffles’ first reveal in 2021 as a Japanese restaurant by a Michelin-starred chef, Sushi Kissho by Miyakawa is now officially open.


Chef Masaaki Miyakawa is one of six elite sushi masters to have held three Michelin stars and the Raffles dining spot is his first international outpost. It will be helmed by executive chef Hironori Satake.


So what can diners expect? Sushi Kissho by Miyakawa embodies the Japanese essence of ‘wabi-sabi’, or the art of finding beauty in simplicity. A seasonally rotating Edomae sushi menu sources fresh produce from the North Pacific Ocean and the Sea of Japan, ensuring each piece of sushi hits plates at peak freshness and full of flavour. 


Fish is delicately paired with three types of rice, including Hokkaido’s soft and fragrant yumepirika rice, light sasanishiki rice from Akita Prefecture and sweet koshihikari rice, also from Hokkaido. 


Diners can enjoy a dinner omakase experience at the sushi counter including three appetisers, eight pieces of sushi, soup, egg omelette and a dessert. The more indulgent option includes five appetisers and ten sushi pieces.


Appetisers run from seared alfonsino, a pale fish with a mildly sweet flavour served with mountain wasabi, ginger, green onion and ponzu vinegar, and black abalone with liver sauce, which is a signature dish from Miyakawa’s three-Michelin-starred restaurant in Sapporo.


Highlights from the many sushi options include aged chu-toro (medium fatty tuna) marinated in home-brewed soy sauce, and ‘kuruma ebi’ prawn, lightly blanched for sweetness. The menus start from MOP1,888 per guest.


Raffles at Galaxy Macau opened as part of the HK$43 billion Galaxy Macau development and is one of eight luxury hotels that make up the complex. Combined, these properties offer more than 4,000 rooms, and, alongside Raffles at Galaxy Macau, include Banyan Tree, Galaxy Hotel, Hotel Okura Macau, JW Marriott-Hotel Macau, The Ritz-Carlton Macau, Broadway Hotel, Andaz Macau and the soon-to-be-launched, Capella at Galaxy Macau. Guests have access to the Grand Resort Deck featuring the world's longest Skytop Adventure Rapids, a Skytop Wave Pool and a 150m artificial sand beach.
