Tantalising Thai at Peppermint at ParkRoyal Collection Marina Bay

‘Tantalising Thai’ has returned to Peppermint at ParkRoyal Collection Marina Bay with a irresistible collection of lip-smacking dishes from the Land of Smiles.

Crafted by Peppermint’s chef de cuisine, Leon Yee, and his team, the ‘Bangkok to the bay’ buffet runs from now until May 17.

The huge banquet runs from royal palace plates to rustic talad (market) fare with plenty of choice. Menu highlights include Tom Yum Talay, a classic seafood soup with lemongrass, galangal, kaffir lime leaf and chilli, Gaeng Khua Sapparod with tiger prawns cooked in pineapple curry, and  Pu Phad Phong Kari with sweet crabmeat folded into curry, egg and aromatics (think Singapore chilli crab). 

We loved the Josper Wood Fire Grill where charcoal and flames lend a distinct flavour to fish and meats. There’s also a fun do-it-yourself seafood and lobster laksa tower; select your choice of seafood, vegetables and condiments and present your bowl to the chef with your noodle preference and your laksa is freshly prepared in a rich, coconut curry broth.

The colourful dessert table includes more-ish mango sticky rice presented in a huge bamboo steamer, a selection of cakes and traditional bite-sized loob choob Thai sweets.
